Ingredients required for Sooji Upma / Rava Upma
Sooji / Rava – 1 cup
Potato – 2 medium sized, thinly sliced
Cauliflower, Carrot, Beans – 1 cup, finely chopped
Peas – ¼ cup
Onion – 1 medium size, finely chopped
Green chili – 4, chopped (as per taste)
Mustard – ½ tsp
Cumin – ¼ tsp
Mustard oil – 2 tsp
Turmeric – ½ tsp
salt – as per taste
curry leaves – few
Coriander leaves – for garnish, chopped
Water – 2 ½ cups

How To Make Vegetable Sooji Upma – Rava Upma Recipe Step by Step

Step 1 – Roast the Sooji in a pan on low-medium flame till it turns light brown. After that take it out in a bowl
Step 2 – Now take a pan and add oil to it (keep the flame medium), after the oil is hot add mustard, cumin and curry leaves. When the mustard starts spluttering, add onions and green chilies and fry till it turns golden brown.
Step 3 – Now add peas, potatoes and other vegetables to it, add turmeric and mix it well. Now add the mentioned amount of water and salt and cook the vegetables till they become soft.
Step 4 – When the vegetable is cooked (reduce the gas flame a little), add roasted Sooji little by little and mix it well such that there are no lumps in it. Keep stirring it until the sooji absorbs the water well.
Now remove it from the gas. Now Vegetable Suji Upma is ready, serve it hot with Aloo Dum or Vegetable Sambar.
