Dalma is a healthy and tasty recipe made by mixing Dal(Pulses) and different vegetables. It is very popular in the Indian state of Odisha. It is a very common cuisine in every home, temple and restaurant in Odisha. It is as nutritious as it is delicious to eat. This is the easiest recipe made with less oil and people of all ages also like it.

Although it has many varieties, it is made in different ways. Different types of Dalma are made from each type of dal in Odisha like Badia Dalma, Plain Dalma, Habisha Dalma, Chingudi Dalma etc. And everyone’s method of preparation is different and the taste is also different. But today I will share here a simple Plain Dalma recipe made of Arhar Dal(Toor Dal), which we will make without onion and garlic, which I came to know from one of an old mother. We Will also learn the rest of the Dalma variety from this old mother in the next post. Then let’s go to know about the methods of making popular odia Dalma recipe.

Popular Odia Dalma Recipes

Ingredients needed to make it
Arhar Dal (Split Toor Dal) – 100 grams
1 Large potato, Cubed
1 Large eggplant, Cubed
1 Small carrot, chopped
2 Small taro, chopped
50 Grams pumpkin, chopped
1 Big size tomato, chopped
Bay leaves – 2
Grated coriander leaves – 1 tsp
Ingredients for seasoning
Mustard – one teaspon
Cumin – ½ Teaspoon
Coarsely ground ginger and green chili – 1 tsp
Dry chili – 2

Step wise process of making Dalma
1st step – Wash the dal well, as well as wash all the above vegetables and chop them well.
2nd step – Put Dal, 3 Cups water, salt and turmeric in a pressure cooker and leave the gas on medium flame to boil the pulses.
3rd step – When the Dal starts to boil, then put all the vegetables in it (except tomatoes and brinjal) and also add 2 bay leaves to it, and leave it to cook on medium heat.
4th step – When the vegetables are slightly cooked, add the brinjals and when the vegetables are more than half cooked, add the tomatoes and then leave the vegetables to cook completely. When the vegetables are cooked, remove the cooker from the gas.
5th Step – Now it’s time to season, keep a pan on low flame for seasoning
6th step – When the pan becomes slightly hot, add ghee or mustard oil to it.
7th step – After the oil is hot, fry mustard, cumin and dry chilies well, and finally add ginger chili paste and fry it a little (leave it when the smell starts coming). Now Mix the cooked Dal and vegetables in it and add the coriander leaves(It is the right time to add coriander leaves in Curry), then leave it for 2-3 minutes on low flame. After 3 minutes turn off the gas.
Now the delicious and healthy Dalma recipe is ready, you can serve it with rice, roti, puri or chapati.
